Five Night Kitchen

Use what you have

Measure risotto rice and add hot water in stages

Use the short-grain risotto ingredient for the mushroom and pea dinner, then control the hot liquid as the grains cook. Frequent stirring, grain tenderness and a slowly spreading finish guide this method.

Measure the part you can use

Mushroom and pea risotto needs 170g dry risotto rice for two recipe servings. Weigh the dry grain before it enters the mushroom pot. A 100g supply leaves a 70g gap. An example 500g packet covers that gap with 430g unassigned; choose an actual packet size that suits your needs. Four servings need 340g rice and leave a 240g gap against the same stock. Hot water changes cooked yield without changing this dry-rice allocation.

Choose the texture you want

Prepare mushrooms and heat the measured water

Slice mushrooms 5mm thick and brown them until their released liquid evaporates before adding the onion and garlic. Heat the recipe’s 800ml water separately until steaming. This allows the first liquid addition to start from the stated recipe conditions. For this risotto method, add the measured dry rice without rinsing and stir it through the mushroom mixture for one minute.

Add another ladle when the last is mostly absorbed

Begin with enough measured hot water to just cover the rice and keep a gentle simmer. Stir frequently and add the remaining water a ladle at a time as the previous addition is mostly absorbed. The recipe’s 18–25 minutes is a checking range. Add peas for the final five minutes and judge the rice by tenderness with a little bite.

Adjust the flowing finish before serving

If the measured water runs out while grains remain firm, add and record more hot processing water. If the pot is soupy, let it simmer briefly before the next addition. Remove from heat, add the measured lemon juice and rest for one minute. The finished risotto should spread slowly across a plate; loosen a stiff pot with the recipe’s final splash of hot water.

When the result is not quite right

A hot pan can lose liquid faster than another pan, so the measured water is a starting recipe amount rather than proof that every grain must already be tender. Lower an aggressive boil and stir the bottom. Do not replace the gradual additions with a fixed covered-rice absorption routine. When scaling, scale the complete recipe and follow its pot-capacity and batch checks.

Allocate your short-grain risotto rice

Choose dinners in the list below. Stock is assigned in that order; any shortfall remains visible. This only totals short-grain risotto rice, so check every full recipe for its other ingredients and method.

The week opens with its own saved settings. Add your stock there to deduct it from the full shopping list.

Keep and prepare your stock

Keep unused dry risotto rice under its package instructions and cook this dinner fresh for its flowing finish. Unexpected cooked leftovers need prompt shallow-container cooling and the complete recipe’s storage plan. The planner’s 24-hour refrigerated cooked-rice maximum is a conservative product rule; earlier actual ingredient limits remain in force. Reheating does not restart that clock.

Avoid this mix-up

The ingredient list distinguishes risotto rice from the ordinary dry rice used in other dinners. Equal gram weights do not establish an interchangeable cooking method. This single-ingredient worksheet records dry grain and cannot confirm texture, cooking time or a completed prepared batch.

Use the storage guide for prepared batches, and follow actual product labels. Our recipe and quantity checks are not a real cooking trial.
